I love easy recipes. As much as I enjoy using teaspoons and cups, let's face it - I hate washing the dishes. And with a complicated recipe, I'll have to wash the quarter teaspoon, the half teaspoon, the teaspoon, the half tablespoon, and so on. Sometimes, it's nice to be able to have a minimalist approach towards cooking (less dishes!). I'm not even sure if I should call this recipe cooking - it's really assembling.
And now with Spring here, these chocolate chip stuffed raspberries are perfect for munching on. Speaking of Spring reminds me of fuzzy creatures. Let's go off on a tangent: My mom is a horrible driver, especially at night. I'm a horrible map-reader, day or night. When the two of us are in a car, we tend to fight over which road we're on/where we are/whether we are lost/and etc. So one day, not too long ago, in the night, we ran over a squirrel. If was, after all, at night, so I didn't see the whole process of the squirrel getting squished. I'm not 100% positive that we killed one. There
is, no matter how small, a chance that the squirrel managed to survive. But, I doubt that. Unless the squirrel had some kung-fu, ninja-magical powers, it probably got flattened. Call us the terrible two, or the disastrous driving duos. I think squirrels and me just don't go along. I mean, I almost ran over an already-ran over squirrel before. (If you don't get that lingo, I was running outside, and I almost stepped over a flattened squirrel. If you still don't understand what I mean by ran over and already ran over and flattened, read
this.)
Anyway, getting back on topic, these are seriously easy to make. Just take a chocolate chip (I used a combo of white/semi-sweet, use whatever that floats your boat) and insert it tip-side down into the raspberries's cavity. And that's it! You have a yummy chocolate-chip stuffed raspberry!
No recipe???:)
