Holiday Baking!



Happy Holidays, my darlings! I just came back home from volunteering at a senior center! I love volunteering, especially during the holidays. I don't think there's a better way to get into the holiday spirit than to volunteer!

Last night, I was baking with my very lovely friend, Sam. She's such a sweet person. We made carrot cupcakes, chocolate truffles, and chocolate chip cookies! And it was all vegan! Surprisingly, vegan baking is very similar to regular baking. It's not as hard or as complicated as I thought it would be. Below are some photos I took from our night of baking. I hope you guys all have a wonderful holiday with your family and friends!



That was our workspace. Yeah. That was all. It was teeny-tiny, and we utilized every surface, including the stools. I still can't believe we made cupcakes, frosting, chocolate truffles, and chocolate chip cookies all on that tiny countertop.


Carrot cupcakes, sans frosting. We put crushed pineapple, carrots, cinnamon, allspice, and coconut into these cupcakes! Yummmmmmmm.


And now, the cupcakes with frosting. The frosting is made from vegan cream cheese, margarine, vanilla extract, and powdered sugar. It's rather runny.

We're in the process of making chocolate truffles. We used dairy-free chocolate chips and vegan cream cheese, along with espresso and lots and lots of powdered sugar!


This is probably one of my favorite pictures. I love how the camera captures the motion of Sam's hand. The quality isn't bad either, considering it's from a phone.


Look at the swirl pattern! Pretty clever, huh? The white ones are chocolate truffles rolled in a mixture of powdered sugar and coconut flakes. The brown powder-y ones are rolled in cocoa powder, and the "chunky" looking ones are rolled in hazelnuts. 


Such a nice way of dressing up a boring plate of cookies, don't you think? I obviously wasn't in charge of the artistic side of the baking. I was dishwasher and floor wiper. :) I obviously am not talented enough to think of using a Christmas ornament and pine needles to jazz up a plate of aluminum foil-covered cookies.

And last but not least, here's a picture of a Christmas tree. (How could I leave it out?)


And lots of thanks to Sam, who let me take a lot of pictures on her phone and willingly sent them to me. I'm a true blogger who takes at least three photos from each angle, so that was a lot of photos she had to send!
