Long time no blog, my imaginary friends! Senior year of high school has arrived, and it has been busy. There is quite a bit going on right now (science fair, college applications, normal school work, dance class...), but it has all been going smoothly, thankfully.
I am not taking physics this year, thank goodness. Last year, I took physics as well as AP Chemistry, and that was a struggle. I managed to survive though! This year, I decided to not take an additional year of physics, and I think that was the right choice.
A new school year means sitting with different people at lunch. Last year, I brought lots of mason jar salads for lunch. At first, all my friends were intrigued, but they lost interest as the school year went on. But the new people I sit with at lunch are still interested. :D They think it's super clever and beautiful and that I'm oh-so-original (okay, I made the last part up), but I actually got the idea from Pinterest. (My friend is addicted to that site. Okay. Fine. I might be too).
I threw in what I had into the salad. No specific theme going on.
Balsamic vinaigrette = balsamic vinegar + salt + honey + olive oil
I didn't measure the amounts for the dressing. But it's around 2 parts vinegar, 1 part honey, a teeny drizzle of olive oil and a pinch of salt. I just kept tasting and adjusting it.
Salad = vinaigrette (above) + grape tomatoes (halved) + zucchini (chopped) + chickpeas (drained and rinsed from a can) + couscous (cooked with a bit of garlic powder) + turkey + dried cranberries + glazed walnuts + greens
Again, I didn't measure anything for the salad (does anyone even do that?). I just put a handful of this and a sprinkle of that in. Put however much you want in!
